Macadamia Ginger Crunch Drops

-inspiration from “Vegan Cookies Invade Your Cookie Jar”

makes 2 1/2 dozen cookies, roughly.

In a medium mixing bowl, sift together the following:

  • 2 cups of flour (non-bleach white)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon

In a large mixing bowl, beat together the following:

  • 2/3 cups canola oil
  • 1/3 cup of vanilla soy milk
  • 2 tsp vanilla extract
  • 3/4 cup firmly packed light brown sugar
  • 2/3 cup regular sugar
  • 1 tsp ground flax seed

After you are done beating the ingredients add flour mixture into wet ingredients. Mix until just combined (If you over-mix your cookie dough, it will be dry and it will suck).

Mix in 1 1/3 cups of chopped unsalted macadamia nuts, 1/2 a cup of finely chopped candied ginger, and 1/4 (ish) cup of unsweetened coconut flakes. The dough is going to be thick/sticky, but we added in a few extra splashes of soymilk to make it less dry.

Spoon out the cookie dough (we used a cookie dough scoop, best invention ever) onto baking sheets lined with parchment paper. Leave around 2 inches in between the cookies because they will spread. Bake them for 14 - 15 minutes in a 350 degree oven and then transfer to a cooling rack.
